My problem is that after driving my car for approximately 5-6 hours each day, my car suddenly loses power to the point that when I press down on the gas pedal, I get no response and the car frequently dies. The car immediately restarts goes slowly and slowly regains power.

Stu, I would check the throttle position sensor, which if improperly adjusted should give you similar results as you are experiencing and give you a trouble code.
Have you had an analyzer put on the engine? It also sounds to me like your exhaust pipe is restricted or almost plugged to the point of the engine not breathing properly. I would also check the linkage to the throttle body. It also sounds to me like your ignition timing is way retarded to the point of no power.
Stu you need to give it a good tune up and check out your vacuum hoses, air filter, plugs, engine codes, fuel filter, and just look around for loose ignition parts, like spark box lids, distributor cap, etc.
I don’t know why this would happen after such a long trip each day. What a commute you have Stu! Take a good look under the hood.
